Product Details
This lot is processed as an anaerobic natural: whole cherries fermented in sealed tanks for 48–64 hours before being pulped and dried. It's a departure from the natural processing more commonly used across South Sudan, where cherries are typically dried whole and, on a smaller scale, pounded by hand in a wooden bowl.
The coffee itself is Excelsa, a distinct species in its own right, hardy and disease-resistant, and indigenous to South Sudan - a fact confirmed through genetic testing by the Royal Botanic Gardens, Kew, which also found high genetic diversity in the variety, pointing to strong potential for further selection and improvement.
